היסטוריה ומקורות
The custom of eating dairy foods on Shavuot is mentioned in the gloss of Moses Isserles (the Rema) on the Shulchan Arukh.1
There are many explanations for dairy foods on Shavuot, for example that after receiving the Torah the Israelites did not yet have kosher meat prepared, or a reference to "a land flowing with milk and honey".
Filled crêpes (blintzes, from the East Slavic blin) came into Ashkenazi cooking from Ukraine and Poland.2
גרסאות אזוריות
Besides farmer cheese they are filled with apples, cherries or blueberries; savory versions with potatoes and onion (these can be parve if fried in oil).
Two rolled blintzes side by side are sometimes interpreted as a reminder of the two tablets of the Law.
